深海魚、大型魚類才較有汞污染的疑慮不用太擔心。雖然鱸魚、鯉魚等淡水魚的魚膽含有毒性很強的膽汁毒素,不易被加熱和乙醇所破壞,但是要到達這樣的毒素也是非常高的劑量,普通情況下不用太煩惱。
